Food for your wedding can be exquisite without being expensive. Bring flavor to your reception with these easy-to-follow recipes compliments of The Bridal Resource Guide.
Sausage and Cornichon Ficelle Sandwiches
Makes 5
ΒΌ cup softened unsalted butter
1 ficelle halved horizontally
5 ounces of sausage cut in thin slices
10 cornichons thinly sliced
1. Spread butter on cut sides of bread. Lay sausage slices on bottom half of bread. Top with cornichons.
2. Cut sandwiches diagonally, discarding crust. Wrap in parchment paper and serve.
Bocconcini, cherry tomato, and basil salad
Serves 6
3 tablespoons extra-virgin olive oil
Salt and pepper
8 ounces bocconcini (or mozzarella cheese) cut into cubes
8 ounces cherry tomatoes (about 1.5 cups)
30 leaves fresh basil
1. Put oil into medium bowl and season with salt and pepper (a pinch of each and stir).
2. Add bocconcini, tomatoes, and basil. Toss gently.
3. Serve within 3 hours or refrigerate up to 8 hours for best results.
Festive Chip Dip
Serves 5
8 ounces or one jar spreadable cheese
4 ounces salsa (mild is the safest to use)
2 tablespoons chopped onion
1. Put cheese into large microwave-safe bowl. Spread evenly.
2. Place salsa on top of cheese. Do not mix.
3. Microwave on High setting for approximately 1 minute. Stir. If cheese is still cold, place in microwave and heat for additional 30 seconds. Stir again.
4. Stir in chopped onions. Serve with tortilla chips. Makes perfect dip every time!
